The secret of Indian cooking doesn't lie in the large variety of spices used, but rather in blending them carefully and cooking them in such a way that their flavour develops to its full richness. The dishes are simply cooked in a pan on an open fire or in a tandoor charcoal oven. Naan bread isn't just a side dish to accompany a curry, but is the replacement for cutlery. Indians use small pieces of naan bread to pick up their food and scoop up the sauce. The word curry is a phonetic misinterpretation that was imported to Europe by the British. The Tamil word kari (dip) is purported to be the origin of the word curry. The word is frequently used to describe all Indian dishes, and sometimes for dishes that are made with a particular sauce. But the Indian curry should not be confused with the mixture of spices with which we in Europe are familiar. It is more a mixture of different spices that taste different every time depending upon one's own personal preferences. Every housewife and every cook prepares his or her own curry spice mixture, the ingredients of which are guarded jealously.
